Recipe Tuesday

I bet you thought I wasn't going to stick to this whole cooking endeavor, right? Even a vacation didn't stop me! Although I guess I should note that this dinner was a dual effort.

Based on an idea from Gerard about prepping for beach vacations, The Mr and I prepared 2 dinners to take with us to the beach and asked Theresa & co. to also come prepared with 2 dinners. The purpose of this was to keep costs down.

Well Theresa prepped her meals ahead of time like we had asked. Us? Yeah - we didn't. We just bought the ingredients and took them down to the beach with us. And this is what I alluded to yesterday when I said we learned the hard way that we need to be better prepared for beach vacations. Trying to zest a lemon without a zester, chop or mince anything without a really good knife or cutting board and even store food without seran wrap or aliminum foil is no easy task.

One of the recipes we had prepared (i.e. bought the ingredients) was for a Vegan lasagna from my awesome Veganomicon cookbook. The Mr and I compromised this recipe. I wanted to reduce the amount of cheese as much as possible but he needed some "real cheese". So, the majority of the lasagna was cheeseless but the top layer was sprinkled with mozzarella cheese.

I didn't take pictures during the preparation of this because I was too busy yelling, "Shit! Dammit! I need a knife. This fucking sucks. How the hell am I supposed to mince this garlic?! I told you we should have put this together at home!" I didn't even think about snapping a picture until today... and it's the leftover so it isn't very pretty.


I challenge you to keep a piece of lasagna nicely together after scooping it into another container! And if you successfully accomplish such task, I need detailed instructions on how you did this.


I realize that this extreme closeup kind of looks a bit dirty and scandalous, but I wanted to show you the tofu. The tofu (flavored with lemon juice, lemon zest, garlic, fresh basil and olive oil) was meant to be the ricotta cheese. I just wanted to show you how much it resembled ricotta cheese. And it was freakin' delicious.

While Theresa & Co may have just been being polite, The Mr swore up and down that he really enjoyed this dish. I'm sparing you guys the recipe because it might be ignored due to the unappetizing pictures of the end result. However, if you really really want the recipe, let me know and I'll either post it or send it to you.

I'm slowly but surely showing The Mr that going meatless can be delicious and delightful.

the lasagna was good. if i hated it, i wouldn't have eaten seconds or eaten it for lunch the next day.

by the way i totally made that chickpea curry last night for dinner - delicious!

fyi, if you want to be able to scoop lasagna into a separate container to save for leftovers, chill it for a bit first before cutting it into neat squares with a knife then use a spatua to remove and transfer to another container.

if you have room in your freezer, you can stick the entire pan (once it's cooled a bit so it doesn't defrost your freezer) in and let it sit for about 15 - 20 minutes and then when you remove it, you should be able to cut it and transfer with little to no mess.
