Baking Fun!

I recently found a recipe for Burger Bites at a great recipe blog JustJenn Recipes. Seriously - check it out. The things she makes are so creative and her presentation always inspire me to step up my baking game.

This past week at work, we had a potluck lunch. I have to say, the guy who organized it got a lot of flack for being a bit... um... pushy? but it just reminded me of why I quit doing things like that. It's really tough to try to do "fun" things within a team of people who don't seem to want anything to do with it.

I wanted to prepare a vegan dessert just because I had recently made Vegan Jelly Donut Cupcakes and they were a hit. It was fun to show people that vegan doesn't mean disgusting. The recipe is from the Veganomicon cookbook but many of the recipes in their intimidate me because it asks for some different ingredients. The cupcakes were pretty normal.

I found a recipe online for peanut butter balls that I had started to prepare but because of the timing of the potluck (it was rescheduled at the last minute), I didn't get a chance to bring them. Plus The Mr's poor reaction to them didn't really entice me into wanting to share them with my colleagues. I liked them but apparently raisins aren't a crowd favorite.

Because of the hectic week ahead (with doing bridal shower related things and other cookouts), I wanted to make something simple that didn't require overnight refrigeration. So I decided to try the Mini Burger Bites (plus I thought the idea of the resident vegetarian bringing in "mini burger bites" was funny).

So here are the results of my attempt at the mini burger bites (sorry for the poor quality of pictures - these were taken with my phone):

I colored shredded coconut. My advice? Don't use so much coconut unless you're making a crapton of burger bites. I hate waste and I definitely have tons of this stuff leftover. What else can you do with green shredded coconut?


The first assembly. The hardest part of this recipe is unwrapping all of the York peppermint patties. I had decided (and you'll notice it in the first picture) that instead of placing each mini burger bite in a cupcake liner, I'd wrap them in the York peppermint patty wrapper (reminiscent of a hamburger wrapper).


The piece de resistance! Here's another word of advice... don't do more than 24 at a time. Timing is key here and you have a very short window after heating up the York peppermint patties to place the tops on the bites so that they stick. Although there weren't any tragedies (thanks to the York peppermint patties wrapped around each bite), I definitely lost some stickage due to the amount of time it took me to assemble all of the bites.

Seriously though - how cute, right? They look like little hamburgers! Because I purchased most of my supplies from BJs (bulk shopping heavan!), I have made this dessert twice this week. I took them to Traci's 4th of July party and I think they were a hit (there weren't many leftover). I'm also making them again for my MIL's birthday cookout (I told you I hate waste... I really need to use this shredded coconut!).

These would probably be a hit a kid's party and it looks so cute and crafty that people might think you slaved over them. And hello? York peppermint patties and Nilla wafers aren't awful for you so you can totally justify eating like 10 of them.

justjenn is awesome, as are the burger bites! I've had all the ingredients for a while now but have been too lazy to whip some up. Maybe I will tonight. :)

Oh, and it helps if you can recruit the Mr. to help place the cookie tops on the patties right out of the oven as you sprinkle the coconut.

I also love the idea of keeping the wrappers! I'm assuming they were big enough to wrap about the whole thing?
